A native of San Miguel, he has been working in fine restaurant kitchens since the age of 19. Gonzalo has a penchant for fresh organic food and is known for his innovative menus and picture-perfect plates. He brings both art and passion to the Sazon kitchen.
Born in San Miguel to teacher parents (his dad is the Principal of Pípila), since returning home, Chef Gonzalo has been busy meeting local farmers and rancheros to source the very best ingredients in the region. He is passionate about using Mexican products and staples as a basis for original gourmet cuisine.
Guests and locals can sample some of his creations at the hotels' restaurants as well as enjoy taking classes with Gonzalo.
